Production Process:
Cheese is created through the coagulation of milk protein called casein. During production:
Milk (usually from cows, buffalo, goats, or sheep) is acidified.
Enzymes (such as rennet) or bacterial enzymes are added to cause the casein to coagulate.
The solid curds are separated from the liquid whey and pressed into finished cheese.
Some cheeses develop aromatic molds on their rind or throughout.

Milk origin (including the animal’s diet).
Pasteurization.
